Secret Islay 8 yo Single Malt Virgin Oak Finish - 56.7% abv (500ml)
Nose | Palate: Wild Islay bonfire, white pepper, pine needles, stewed apples, vanilla pod, honey, green tea and cinnamon | Surprisingly soft, salty, seaweed and kippers, yellow toffee apples and rum cake. A big whack of smoke rolls through a long finish.
How it’s made: From a single cask, distilled in South Islay. Initially matured in refill Bourbon then transferred to a ex Rum, ex Cider cask before finishing in Virgin Oak. The unique barrel used for finishing was a gift from our friends at Futtle Brewery in Fife. They had been maturing golden rum in it, however prior to Futtle it had spent some time at Little Pomona in North Herefordshire where it had been maturing natural Cider. The ex-bourbon Islay Single Malt they re-racked into this cask for several months before a final finishing in Virgin Oak to round it out. Distilled 30.01.2017. Natural colour, non-chilled filtered. About the maker: Blind Summit Whisky is a Leith-based passion project by two friends, James & Jamie. An independent whisky bottler focussing on exciting, brightly labelled, flavourful whiskies. It’s a bit more like the whisky equivalent to Gypsy Brewing with selection, maturation and bottling being carried out in different locations depending on which friendly warehouse is available.
