How it's made: With zero dosage and sealed under crown cap, Prosecco 'Col Fondo' is characterised by the deposit of the yeasts on the bottom: it is made according to the ancestral method, used since ancient times where the second fermentation is in the bottle without disgorgement.
About the maker: The Fidora family have farmed grapes organically since 1974. They were the first estate to be certified in the Veneto region. The newest generation, Emilio Fidora, has adopted biodynamic farming in 2015 and expects to be certified in 2020. The estate makes all of their own biodynamic preparations and this approach mirrors their commitment to biodiversity on their estate.
